Easy Baked Feta Pasta Recipe

Ingredients
  

  • 2 pints cherry tomatoes
  • 1 (8 oz) block feta cheese
  • 1/4 cup olive oil
  • 4 cloves garlic, smashed
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes
  • 1/2 tsp kosher salt
  • Freshly ground black pepper
  • 1 lb short pasta
  • 1/2 cup fresh basil leaves, torn

Method
 

  1. Heat oven to 400°F (200°C). Place tomatoes, feta, olive oil, garlic, oregano, red pepper flakes, salt, and pepper in a 9x13-inch baking dish.
  2. Roast for 30-35 minutes until tomatoes burst and feta softens.
  3. Meanwhile, cook pasta in salted boiling water until al dente. Reserve 1 cup pasta water, then drain.
  4. Stir the baked feta and tomatoes into a creamy sauce. Add pasta and 1/2 cup pasta water, tossing to coat. Add more water if needed.
  5. Serve immediately with torn fresh basil and an extra drizzle of olive oil.

Notes

If you want to add a handful of spinach, stir it in right after you toss the pasta so it wilts in the residual heat. For a little extra depth, a splash of balsamic vinegar drizzled over the tomatoes before baking works nicely.
