Easy Baked Chicken Parmesan Recipe

Ingredients
  

  • 2 large boneless skinless chicken breasts (about 1 1/2 lb total)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon water
  • 1 cup plain breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil

Method
 

  1. Preheat oven to 400°F with a wire rack set on a baking sheet; spray the rack. Slice chicken breasts horizontally into 4 cutlets and pound to 1/2 inch thick.
  2. Set up a breading station: flour on one plate, egg whisked with water in a bowl, and a mixture of breadcrumbs, Parmesan, garlic powder, oregano, salt, and pepper on another plate.
  3. Coat each cutlet in flour, then egg, then press firmly into the breadcrumb mixture. Place on the rack, drizzle or spray with olive oil.
  4. Bake 15 minutes, flip, and bake another 10 to 15 minutes until golden and the chicken reaches 165°F.
  5. Top each cutlet with 1/4 cup marinara and 1/4 cup mozzarella. Broil on high for 2 to 3 minutes until the cheese is bubbly and browned. Serve immediately.

Notes

For the crunchiest results, serve right away; the crust softens as it sits. If you don't have a wire rack, bake the cutlets directly on a greased baking sheet and flip once extra during baking. Warming the marinara before topping helps keep the crust crisp.
