- Preheat oven to 400°F with a wire rack set on a baking sheet; spray the rack. Slice chicken breasts horizontally into 4 cutlets and pound to 1/2 inch thick.
- Set up a breading station: flour on one plate, egg whisked with water in a bowl, and a mixture of breadcrumbs, Parmesan, garlic powder, oregano, salt, and pepper on another plate.
- Coat each cutlet in flour, then egg, then press firmly into the breadcrumb mixture. Place on the rack, drizzle or spray with olive oil.
- Bake 15 minutes, flip, and bake another 10 to 15 minutes until golden and the chicken reaches 165°F.
- Top each cutlet with 1/4 cup marinara and 1/4 cup mozzarella. Broil on high for 2 to 3 minutes until the cheese is bubbly and browned. Serve immediately.
Notes
For the crunchiest results, serve right away; the crust softens as it sits. If you don't have a wire rack, bake the cutlets directly on a greased baking sheet and flip once extra during baking. Warming the marinara before topping helps keep the crust crisp.
