Ingredients

  • 14.3 oz package chocolate sandwich cookies (like Oreos)
  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 ¾ cups cold milk
  • 2 boxes (3.4 oz each) instant vanilla pudding mix
  • 12 oz frozen whipped topping, thawed
  • 1 cup pastel candy eggs
  • Optional green food coloring and shredded coconut for decoration

Method

  1. Crush the cookies into fine crumbs. Mix 1 ½ cups crumbs with melted butter and press into a 9x13 inch dish.
  2. Beat cream cheese and powdered sugar until smooth and fluffy.
  3. Whisk milk and pudding mix for 2 minutes until thickened. Fold in whipped topping, then fold in the cream cheese mixture.
  4. Spread half the cream filling over the crust, top with ¾ cup cookie crumbs, then spread remaining filling and top with remaining crumbs.
  5. Press candy eggs into the top layer, add coconut “grass” if using. Cover and refrigerate at least 2 hours, then serve cold.

Notes

The dessert needs a full 2 hours of chilling to set enough for neat slices, and overnight is even better. If you are short on time, popping it in the freezer for 30 minutes can hurry the firm-up, but do not let it freeze solid.
