- Preheat the oven to 425°F with a 10-inch cast-iron skillet inside. Blend the eggs, flour, milk, vanilla, sugar, and salt until smooth, about 30 seconds.
- Carefully remove the hot skillet. Add the butter and swirl until melted, then pour the batter into the center.
- Bake without opening the oven for 22 to 25 minutes, until deeply golden and puffed.
- Top with powdered sugar or fruit and serve immediately while hot and crisp.
Notes
The batter can be blended a couple of hours ahead and kept at room temperature, but a cold batter may reduce the rise slightly. Let the empty skillet heat in the oven for a full 15 minutes before adding the butter. No matter what, don’t open the oven while it bakes.
