Ingredients
  

  • 1/2 cup (60g) all-purpose flour
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp fine sea salt
  • 1/4 cup (60ml) whole milk
  • 1/4 cup (60ml) hot brewed coffee or water
  • 1/4 cup (56g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup (113g) unsalted butter, at cool room temp
  • 1 cup (120g) powdered sugar, sifted
  • 1 tsp vanilla extract
  • 1 to 2 tsp whole milk
  • Green and orange gel food coloring
  • 3 oz (85g) marzipan
  • 1 standard sheet nori
  • Tiny round candies or sliced almonds, for details

Method
 

  1. Preheat oven to 350°F. Grease two 4-inch round pans. Whisk flour, cocoa, baking powder, baking soda, and salt. Mix milk and coffee.
  2. Beat 1/4 cup butter and sugar until fluffy. Add egg and 1 tsp vanilla. Alternate adding dry ingredients and milk mixture. Divide into pans and bake 20 to 22 minutes. Cool completely.
  3. Beat 1/2 cup butter, powdered sugar, and 1 tsp vanilla with milk to make buttercream. Tint portions orange and green, leave remainder white.
  4. Level cakes and trim to rectangles. Stack with white buttercream, crumb coat, and chill 20 minutes.
  5. Pipe white buttercream on top in short squiggles, then drag a fork to make rice texture. Smooth sides with white buttercream. Chill while making decorations.
  6. Knead and color marzipan. Mold a duck body, head, beak, feet, and tiny green vegetables.
  7. Cut nori into a strip, press onto one side of the cake. Spoon green buttercream behind it, place vegetables. Set duck on the rice bed. Serve chilled.

Notes

The marzipan duck can be made up to 2 days ahead and stored in an airtight container at room temperature. The cake tastes best served the day it’s assembled while the nori is still crisp.
