Dubai Chocolate Ice Cream Recipe

Ingredients
  

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 cup granulated sugar, divided
  • 5 large egg yolks
  • 1/4 cup unsweetened cocoa powder
  • 4 oz dark chocolate (70% cacao), finely chopped
  • 1/2 tsp ground cardamom, or 6 green cardamom pods, lightly crushed
  • 1/4 tsp rosewater (optional)
  • 1/4 cup date syrup or smooth date paste
  • 1/3 cup shelled pistachios, roughly chopped
  • pinch fine sea salt

Method
 

  1. Combine milk, 1/4 cup sugar, and cardamom pods in a saucepan. Heat until steaming, about 4 minutes, then remove from heat and steep 20 minutes. Discard pods if used.
  2. Whisk remaining 3/4 cup sugar, cocoa powder, and salt in a bowl. Whisk in egg yolks until thick. Slowly whisk in the warm milk, then return to saucepan. Cook over low heat, stirring, until custard coats the spoon, about 8 minutes to 170°F (77°C).
  3. Off heat, stir in chopped chocolate until melted, then stir in heavy cream and rosewater. Cover surface with plastic wrap and chill at least 4 hours or overnight.
  4. Churn chilled base in ice cream maker for 20 to 25 minutes until soft-serve consistency. In last minute, drizzle in date syrup and scatter pistachios.
  5. Transfer to container, layering extra date syrup and pistachios if desired. Freeze at least 6 hours. Let soften 5 minutes before scooping.

Notes

Freeze the ice cream for at least 6 hours before serving, and let it sit at room temperature for about 5 minutes to scoop easily. The date swirl becomes even more fudgy after a full day in the freezer.
