Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, very soft
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp whole milk (optional, if needed)

Method
 

  1. Whisk the flour, baking powder, and salt in a medium bowl.
  2. Beat the soft butter and sugar in a large bowl with a spoon until pale and fluffy.
  3. Stir in the egg and vanilla until smooth.
  4. Add the dry ingredients and stir just until combined, adding milk only if the dough is too crumbly.
  5. Drop tablespoonfuls of dough onto a parchment-lined sheet and bake at 350°F for 10 to 12 minutes. Let cool on the sheet for 5 minutes before moving to a rack.

Notes

This dough comes together fast and does not require chilling. If your kitchen is very warm, pop the bowl of dough in the fridge for 10 minutes before scooping to prevent excess spread. The cookies will look slightly underbaked in the center when you pull them from the oven, which is what keeps them soft.
