Doubletree Chocolate Chip Cookies Recipe

Ingredients
  

  • 1 1/2 cups rolled oats
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1 cup (2 sticks) unsalted butter
  • 1 1/2 cups dark brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg plus 1 egg yolk
  • 2 tsp vanilla extract
  • 1/2 tsp lemon juice
  • 2 cups semisweet chocolate chips
  • 1 cup chopped walnuts

Method
 

  1. Brown the butter in a saucepan over medium heat, swirling occasionally, until amber and nutty, 5 to 7 minutes. Pour into a bowl and cool completely.
  2. Grind the oats in a food processor until a fine powder, about 30 seconds. Whisk the oat flour with the all-purpose flour, baking soda, salt, and cinnamon.
  3. Beat the cooled brown butter with both sugars on medium speed until fluffy, about 3 minutes.
  4. Beat in the egg, then the yolk, mixing after each. Add the vanilla and lemon juice, and beat until smooth, about 1 minute.
  5. Mix in the dry ingredients on low speed just until combined, then fold in the chocolate chips and walnuts. Cover and refrigerate at least 4 hours, preferably overnight.
  6. Preheat oven to 325°F (160°C). Scoop 2-tablespoon dough balls onto parchment-lined sheets and bake 12 to 14 minutes, until edges are golden and centers look slightly underdone. Cool on the sheet 5 minutes, then transfer to a rack and serve warm.

Notes

The hands-on time is about 25 minutes, but the dough needs to chill for at least 4 hours, so plan ahead. Bake times listed are for one tray at a time; if you bake multiple trays on different racks, rotate them halfway through.
