Ingredients

  • 1 cup sourdough discard
  • ¾ cup buttermilk
  • ½ cup vegetable oil
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ cup Dutch-process cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 cup semisweet chocolate chips, plus extra for topping

Method

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment. In a large bowl, whisk sourdough discard, buttermilk, oil, sugar, eggs, and vanilla until smooth.
  2. In a separate bowl, sift flour, cocoa powder, baking soda, and salt.
  3. Pour dry ingredients into wet. Fold gently with a spatula until just a few streaks of flour remain.
  4. Fold in 1 cup chocolate chips. Scrape batter into the pan, smooth the top, and sprinkle extra chips on top.
  5. Bake 55 to 65 minutes until a toothpick inserted in the center comes out with moist crumbs. Cool in pan 10 minutes, then lift out and cool on a rack. Slice warm.

Notes

The loaf deepens in flavor overnight. If the top browns too quickly, tent with foil at the 40-minute mark. For the cleanest slices, cool completely, but for those gooey chocolate streaks, cut it slightly warm.
