- Preheat oven to 425°F and line a 12-cup muffin pan with liners. Whisk flour, sugar, cocoa, baking powder, baking soda, and salt in a large bowl.
- Whisk eggs, buttermilk, melted butter, and vanilla in a separate bowl until smooth.
- Pour wet ingredients into dry and fold gently until just combined. Fold in chocolate chips, stopping as soon as they’re distributed.
- Divide batter evenly into liners, filling to the top. Sprinkle extra chips on top. Place pan in oven, reduce heat to 375°F, and bake 18 to 20 minutes.
- Cool in pan 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.
Notes
The buttermilk and eggs should be at room temperature for the best rise. If you forget to take them out early, place eggs in a bowl of warm water for 5 minutes and microwave the buttermilk in a few short bursts until it’s no longer cold.
