- Preheat the oven to 425°F (220°C) and line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In a medium bowl, whisk the eggs, oil, buttermilk, vanilla, and melted chocolate until smooth.
- Fold the dry ingredients into the wet mixture until just combined, then gently fold in the chocolate chips. Divide the batter among the liners, filling them to the top, and sprinkle extra chips on top.
- Bake at 425°F for 5 minutes, then reduce the heat to 350°F (175°C) and bake another 13 to 15 minutes, until a toothpick inserted in the center comes out with moist crumbs. Cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
Muffins taste best the day they are baked but stay moist for a couple of days stored in an airtight container. For a bakery-style finish, a light sprinkle of coarse sugar before baking adds a nice crunch.
