Dorito Taco Bake Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 1 packet (1 oz) taco seasoning
  • 2/3 cup water
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, drained
  • 1/2 cup sour cream
  • 2 cups shredded Mexican blend cheese
  • 2 cups crushed Doritos Nacho Cheese flavor

Method
 

  1. Brown ground beef and onion in a skillet over medium-high heat until no longer pink, about 6-8 minutes. Drain fat, then stir in taco seasoning and water. Simmer 3-4 minutes. Remove from heat and fold in drained Rotel.
  2. Spread half the crushed Doritos in a greased 9x13 dish. Spoon beef mixture over chips, then spread sour cream on top.
  3. Sprinkle 1 cup cheese over sour cream, add remaining crushed Doritos, and top with the last 1 cup cheese.
  4. Bake at 375°F for 20-22 minutes until cheese is melted and bubbly. Let rest 5 minutes, garnish with cilantro, and serve.

Notes

If you want the top extra crunchy, hold back a handful of crushed chips to sprinkle on after baking. The casserole cuts cleanest after a 5-minute rest on the counter.
