Method
- Heat oil in a large heavy pot over medium-high heat. Add beef and sausage and brown for 6 to 8 minutes, breaking up the meat.
- Reduce heat to medium. Add onion, bell pepper, and celery and cook for 5 minutes until softened. Stir in garlic and tomato paste and cook 1 minute.
- Add rice, Cajun seasoning, bay leaf, and a pinch of salt and pepper. Cook 1 to 2 minutes, stirring to coat the rice. Pour in chicken broth, scrape up browned bits, and bring to a boil.
- Cover with a tight lid, reduce heat to low, and cook 15 minutes. Turn off heat and let stand covered for 5 minutes.
- Remove bay leaf, fluff rice with a fork, and fold in half the green onions. Serve topped with remaining onions.
Notes
The cook time includes a 5-minute rest off the heat, which finishes steaming the rice. For extra- crispy bits, use a well-seasoned cast iron pot and don’t stir once the lid goes on.
