Dinosaur Sugar Cookies Recipe

Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp salt

Method
 

  1. Cream the butter and sugar until light and fluffy, about 2 minutes.
  2. Beat in the egg, vanilla, and almond extract until smooth, about 1 minute.
  3. On low speed, mix in the flour and salt just until a soft dough forms.
  4. Divide dough into two discs, wrap, and chill at least 1 hour. Roll to 1/4 inch thick, cut shapes, and chill cut cookies on the sheet for 10 minutes.
  5. Bake at 350°F for 8 to 10 minutes until edges are pale golden. Cool on the sheet 5 minutes, then transfer to a rack.
  6. Decorate cooled cookies with glaze and colored sugar.

Notes

The dough needs at least 1 hour of chilling, plus an extra 10 minutes after cutting for the most defined shapes. Plan for that passive time. The unbaked dough discs can be made a day ahead and kept cold.
