Dijon Mustard Salmon Recipe

Ingredients
  

  • 4 salmon fillets (6 oz each)
  • 3 tbsp Dijon mustard
  • 1/2 cup panko breadcrumbs
  • 2 tbsp olive oil
  • 1 tsp lemon zest
  • 1/4 tsp fine sea salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh parsley
  • Lemon wedges

Method
 

  1. Preheat oven to 425°F (220°C). Pat salmon dry, season with salt and pepper.
  2. Mix Dijon mustard and lemon zest, then brush over the top of each fillet.
  3. Combine panko, olive oil, and parsley. Press onto the mustard-coated side of the fish.
  4. Bake on a lined sheet for 12 to 15 minutes, until the topping is golden and the salmon flakes easily.
  5. Serve immediately with lemon wedges.

Notes

Let the salmon rest for 2 minutes before serving; the crust will set up and the fish finishes cooking gently off the heat. If you skip the panko, give the mustard fillets a quick broil for 1 to 2 minutes at the end for a charred tang.
