- Preheat oven to 425°F (220°C). Pat salmon dry, season with salt and pepper.
- Mix Dijon mustard and lemon zest, then brush over the top of each fillet.
- Combine panko, olive oil, and parsley. Press onto the mustard-coated side of the fish.
- Bake on a lined sheet for 12 to 15 minutes, until the topping is golden and the salmon flakes easily.
- Serve immediately with lemon wedges.
Notes
Let the salmon rest for 2 minutes before serving; the crust will set up and the fish finishes cooking gently off the heat. If you skip the panko, give the mustard fillets a quick broil for 1 to 2 minutes at the end for a charred tang.
