Ingredients
  

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • Salt and freshly ground black pepper, to taste

Method
 

  1. Place eggs in a saucepan, cover with cold water, bring to a boil, then cover and remove from heat. Let sit 12 minutes, then transfer to ice water for at least 5 minutes.
  2. Peel the eggs, slice in half lengthwise, and pop the yolks into a bowl. Arrange the whites on a plate.
  3. Mash the yolks with a fork, then stir in the mayonnaise, mustard, vinegar, salt, and pepper until smooth and creamy.
  4. Spoon or pipe the filling into the whites. Garnish with paprika or chives if you like, and serve.

Notes

For the smoothest filling, use room-temperature mayonnaise so it blends easily with the cold yolks. A pinch of paprika on top adds color but is not counted among the core four ingredients. Eat within a day for the best texture.
