Method
- Place eggs in a saucepan, cover with cold water, bring to a boil, then cover and remove from heat. Let sit 12 minutes, then transfer to ice water for at least 5 minutes.
- Peel the eggs, slice in half lengthwise, and pop the yolks into a bowl. Arrange the whites on a plate.
- Mash the yolks with a fork, then stir in the mayonnaise, mustard, vinegar, salt, and pepper until smooth and creamy.
- Spoon or pipe the filling into the whites. Garnish with paprika or chives if you like, and serve.
Notes
For the smoothest filling, use room-temperature mayonnaise so it blends easily with the cold yolks. A pinch of paprika on top adds color but is not counted among the core four ingredients. Eat within a day for the best texture.
