Deviled Egg Pasta Salad Recipe

Ingredients
  

  • 8 oz elbow macaroni
  • 6 large hard-boiled eggs, chopped
  • ⅔ cup mayonnaise
  • 2 tbsp yellow mustard
  • 3 tbsp sweet pickle relish
  • 1 tsp white vinegar
  • ½ tsp smoked paprika
  • ¼ tsp kosher salt
  • ⅛ tsp black pepper
  • 2 celery ribs, finely diced
  • 2 tbsp finely chopped red onion

Method
 

  1. Cook macaroni in salted boiling water until al dente, about 8 minutes. Drain, rinse with cold water, and let cool.
  2. In a large bowl, whisk together mayonnaise, mustard, relish, vinegar, paprika, salt, and pepper until smooth.
  3. Add cooled pasta, chopped eggs, celery, and onion to the dressing. Fold gently until evenly coated, then cover and refrigerate at least 1 hour.
  4. Stir the salad, taste for salt, transfer to a serving bowl, and sprinkle with extra smoked paprika right before serving.

Notes

The salad needs at least an hour in the fridge for the flavors to come together. If you make it the night before, hold back a spoonful of mayo to stir in just before serving, because the pasta will soak up some of the dressing overnight.
