Ingredients
  

  • 1/2 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 2 tbsp brown sugar
  • 1 tbsp liquid smoke
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 2 tbsp apple cider vinegar
  • 1/4 tsp cayenne pepper (optional)

Method
 

  1. Whisk all ingredients together in a large bowl until the sugar dissolves, about 30 seconds.
  2. Add 2 lbs of venison sliced 1/4 inch thick, coat well, cover, and refrigerate for at least 6 hours or overnight.
  3. Dehydrate the strips at 160°F for 4 to 6 hours, until they bend without snapping, then blot and cool completely.

Notes

This marinade makes enough for about 2 lbs of venison, yielding roughly 1 lb of jerky. Dehydrator times vary with thickness and humidity; start checking at 4 hours. If using a smoker, omit the liquid smoke and keep the heat under 180°F.
