- In a large skillet over medium-high heat, heat olive oil and brown ground beef, about 5 to 7 minutes. Add onion and cook 3 minutes, then garlic for 30 seconds.
- Push beef aside, add diced bell peppers, and cook 4 minutes until softening. Season with salt, pepper, and Italian seasoning.
- Stir in diced tomatoes with juices, tomato sauce, and cooked rice. Simmer uncovered for 5 minutes, adding a splash of water if too thick.
- Sprinkle cheddar over the top, cover skillet, and cook on low heat for 3 to 4 minutes until melted.
- Scoop into plates, top with parsley if desired, and serve hot.
Notes
Day-old rice holds together better and prevents a mushy texture, but freshly cooked rice works just fine. If your skillet is not large enough, cook the beef and peppers in two batches to avoid steaming.
