Deconstructed Stuffed Peppers Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 1 lb lean ground beef (90/10)
  • 3 bell peppers, diced
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tsp Italian seasoning
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (8 oz) can tomato sauce
  • 2 cups cooked white rice
  • 1 cup shredded sharp cheddar cheese
  • Fresh parsley, chopped (optional)

Method
 

  1. In a large skillet over medium-high heat, heat olive oil and brown ground beef, about 5 to 7 minutes. Add onion and cook 3 minutes, then garlic for 30 seconds.
  2. Push beef aside, add diced bell peppers, and cook 4 minutes until softening. Season with salt, pepper, and Italian seasoning.
  3. Stir in diced tomatoes with juices, tomato sauce, and cooked rice. Simmer uncovered for 5 minutes, adding a splash of water if too thick.
  4. Sprinkle cheddar over the top, cover skillet, and cook on low heat for 3 to 4 minutes until melted.
  5. Scoop into plates, top with parsley if desired, and serve hot.

Notes

Day-old rice holds together better and prevents a mushy texture, but freshly cooked rice works just fine. If your skillet is not large enough, cook the beef and peppers in two batches to avoid steaming.
