Deconstructed Cabbage Rolls Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground beef (80/20)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 small head green cabbage, cored and chopped into 1-inch pieces (about 1 1/2 lbs)
  • 1 (15 oz) can plain tomato sauce
  • 1 1/2 cups low-sodium chicken or beef broth
  • 1/2 cup uncooked long-grain white rice, rinsed
  • 1 tsp smoked paprika
  • 1/2 tsp salt, plus more to taste
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh dill or parsley

Method
 

  1. Heat oil in a large skillet or Dutch oven over medium-high. Add beef, cook 5 minutes until browned, breaking it up. Drain most of the fat if needed.
  2. Stir in onion and garlic. Cook 3 minutes until translucent.
  3. Add cabbage, tomato sauce, broth, rice, paprika, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer 20-25 minutes until rice is tender and cabbage is soft.
  4. Remove from heat, stir in most of the herbs, and adjust salt. Spoon into bowls and top with remaining herbs.

Notes

If using brown rice, increase the liquid to 2 cups and simmer 40 to 45 minutes. For an even richer sauce, swirl in a couple tablespoons of heavy cream or sour cream just before serving. Letting the pot rest off the heat for 5 minutes thickens the sauce a bit more.
