Date Protein Balls Recipe

Ingredients
  

  • 1 cup packed pitted Medjool dates (about 12)
  • 1 cup old-fashioned rolled oats
  • 1/2 cup vanilla or unflavored protein powder
  • 1/4 cup creamy peanut butter or almond butter
  • 2 to 3 tablespoons milk (any kind)
  • Pinch of sea salt (optional, if nut butter is unsalted)

Method
 

  1. Pulse the dates and oats in a food processor for about 30 seconds until a coarse, sticky crumb forms.
  2. Add the protein powder, nut butter, and salt; pulse for 20 to 30 seconds until a thick dough comes together, adding milk a tablespoon at a time if needed.
  3. Scoop about 1 tablespoon of dough and roll into smooth balls (makes 14 to 16).
  4. Place on a plate or in a container; serve immediately, or chill 30 minutes for a firmer bite.

Notes

If your dates are dry, soak them in hot water for 10 minutes and drain before blending. The balls will firm up in the fridge and keep well for a week.
