Dark Chocolate Raspberry Cake Recipe

Ingredients
  

  • 1½ cups all-purpose flour
  • ¾ cup Dutch-process cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp fine sea salt
  • 2 large eggs, at room temperature
  • ½ cup unsalted butter, melted and cooled
  • ½ cup full-fat sour cream
  • 1 tsp vanilla extract
  • ½ cup hot strong coffee
  • 1 cup fresh raspberries
  • 3 oz dark chocolate, chopped
  • ¼ cup heavy cream

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9-inch round pan with parchment. Whisk flour, cocoa, sugar, baking powder, baking soda, and salt in a large bowl.
  2. Make a well in the center. Add eggs, melted butter, sour cream, vanilla, and hot coffee. Whisk until just smooth.
  3. Scatter raspberries over the batter and fold in with 3-4 strokes.
  4. Scrape into the pan and bake 30-35 minutes until a toothpick comes out with moist crumbs. Cool in pan 10 minutes, then transfer to rack to cool completely.
  5. Heat cream until simmering, pour over chopped chocolate, let stand 2 minutes, then stir smooth. Pour over cooled cake, top with extra raspberries, and let set before slicing.

Notes

A little sinkage around the berries is normal. If using frozen raspberries, do not thaw. The cake can be baked a day ahead and glazed just before serving.
