Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 6 oz dark chocolate (70% cacao), roughly chopped

Method

  1. Preheat oven to 375°F (190°C) and line two baking sheets with parchment. Cream butter with both sugars until light and fluffy, about 2 minutes.
  2. Beat in egg and vanilla until just combined, about 30 seconds.
  3. Mix in flour, baking soda, and salt on low speed until just absorbed, about 30 seconds.
  4. Fold in chopped chocolate with a spatula until evenly distributed.
  5. Scoop 2-tablespoon mounds onto the sheets, spacing 2 inches apart. Bake one sheet at a time for 10–12 minutes, until edges are golden and centers look soft.
  6. Cool on the sheet for 5 minutes, then transfer to a wire rack. Pile onto a plate and serve warm.

Notes

If the dough feels too soft to scoop, pop the bowl in the fridge for 10 minutes before baking. For a slightly saltier bite, sprinkle a pinch of flaky sea salt over the tops right when they come out of the oven.
