Dairy Free White Chicken Chili Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • ½ tsp dried oregano
  • ¼ tsp smoked paprika (optional)
  • 3 cups cooked shredded chicken
  • 1 (4 oz) can diced green chiles
  • 2 (15 oz) cans cannellini beans, drained and rinsed
  • 2 cups low-sodium chicken broth
  • 1 (13.5 oz) can full-fat coconut milk, well shaken
  • 2 tbsp cornstarch
  • 1 lime, juiced
  • Salt and pepper to taste

Method
 

  1. Heat oil in a large pot over medium heat. Cook onion for 5 minutes until soft, then add garlic, cumin, oregano, and paprika and cook 30 seconds.
  2. Add green chiles, both cans of beans (reserve half of one can), chicken, and broth. Bring to a simmer.
  3. Mash the reserved beans with a fork, stir into the pot.
  4. Whisk cornstarch and coconut milk, pour into the chili, and simmer for 8 minutes until thickened.
  5. Remove from heat, squeeze in lime juice, season with salt and pepper, and serve hot with chips or avocado.

Notes

The chili thickens as it cools, so if making ahead, add a splash of broth when reheating. A rotisserie chicken makes prep extra fast, and the lime is non-negotiable for the brightest flavor.
