Method
- Grate the cucumber onto a clean kitchen towel, sprinkle with 1/4 tsp salt, and let sit 5 minutes. Squeeze firmly to remove as much liquid as possible.
- Whisk the yogurt, garlic, lemon juice, olive oil, dill, and black pepper until smooth.
- Stir the cucumber into the yogurt mixture, taste, and adjust salt or lemon. Spoon into a bowl, drizzle with olive oil, scatter extra dill, and serve.
Notes
For the deepest flavor, chill the sauce for 30 minutes before serving. This lets the garlic mellow and the herbs infuse the yogurt. The sauce will keep in the fridge up to 4 days.
