Dairy-Free Pasta Salad Recipe

Ingredients
  

  • 1 lb short pasta (rotini, fusilli, or penne)
  • 1 pint cherry tomatoes, halved
  • 1 English cucumber, diced
  • 1 bell pepper, diced
  • 1/2 small red onion, thinly sliced
  • 1/2 cup Kalamata olives, halved
  • 1/4 cup chopped fresh parsley
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • 2 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt, plus more for pasta water
  • 1/4 tsp black pepper
  • Optional: 1 can (15 oz) chickpeas, drained and rinsed

Method
 

  1. Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente, about 10 minutes. Drain and rinse under cold water.
  2. While pasta cooks, halve the tomatoes, dice the cucumber and bell pepper, slice the onion, and chop the parsley. Place them in a large bowl with the olives.
  3. In a jar or bowl, combine olive oil, vinegar, lemon juice, Dijon, garlic, oregano, salt, and pepper. Shake or whisk until emulsified.
  4. Add the cooled pasta to the vegetables. Pour the dressing over the top and toss well to coat.
  5. Cover and refrigerate at least 30 minutes. Toss again before serving and garnish with extra parsley. Serve cold or at room temperature.

Notes

Chilling for 30 minutes lets the flavors meld, but the salad tastes even better the next day. If you prep it ahead, stir in a drizzle of olive oil or lemon juice just before serving to perk it back up.
