Dairy-Free Meatballs Recipe

Ingredients
  

  • 1 lb ground beef or a mix
  • ½ cup plain breadcrumbs
  • 3 tbsp unsweetened almond milk or oat milk
  • 1 large egg, beaten
  • 2 small garlic cloves, minced
  • 1 tbsp finely chopped fresh parsley
  • ½ tsp kosher salt
  • Few grinds black pepper
  • Optional: 2 tbsp nutritional yeast
  • Warm marinara sauce, for serving

Method
 

  1. Combine breadcrumbs and dairy-free milk in a large bowl; let sit 2 minutes. Add meat, egg, garlic, parsley, salt, pepper, and nutritional yeast. Mix gently by hand until just combined.
  2. Preheat oven to 400°F (200°C) and line a sheet pan with parchment. Shape the mixture into roughly 18 to 20 golf-ball-sized meatballs.
  3. Place meatballs on the prepared pan and bake for 16 to 18 minutes at 400°F, until browned and cooked through (165°F internal).
  4. Warm marinara sauce while meatballs bake. Spoon the hot sauce over the baked meatballs and serve right away.

Notes

The soaked breadcrumb step keeps these meatballs tender without any dairy, so don’t skip that 2-minute rest. If you’re serving a crowd, warm the sauce in a skillet, add the baked meatballs, and let them mingle for a few minutes before bringing the pan to the table.
