Dairy Free Lasagna Recipe

Ingredients
  

  • 1 (12-ounce) block extra-firm tofu
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 4 cloves garlic
  • 1 (28-ounce) can crushed tomatoes
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Pinch sugar (optional)
  • 12 no-boil lasagna noodles (about 8 ounces)
  • 2 cups shredded dairy-free mozzarella (8 ounces)
  • Fresh basil for garnish (optional)

Method
 

  1. Press the tofu until dry, crumble it into a bowl, and mash with the nutritional yeast, lemon juice, garlic powder, onion powder, and salt until it resembles ricotta.
  2. Heat the olive oil in a saucepan, cook the garlic until fragrant, then add the crushed tomatoes, basil, oregano, and sugar. Simmer for 10–15 minutes, then season with salt and pepper.
  3. Spread a thin layer of sauce in a 9×13-inch dish. Layer 4 noodles, half the ricotta, one-third of the mozzarella, and about a cup of sauce. Repeat with 4 noodles, the rest of the ricotta, and another third of the mozzarella. Top with the last 4 noodles, the remaining sauce, and the final third of mozzarella.
  4. Cover with foil and bake at 375°F (190°C) for 30 minutes. Uncover and bake 15–20 minutes more until golden and bubbly.
  5. Rest the lasagna for 10 minutes, then slice and serve warm with fresh basil if desired.

Notes

Let the lasagna rest for 10 minutes before slicing; this time is not included in the cook time. No-boil noodles work best here because they absorb moisture from the sauce as they bake.
