Method
- Heat oil in a large, deep skillet over medium-high heat. Add ground beef, break it up, and cook until deeply browned, about 6 minutes. Add onion and cook 3 minutes until softened. Stir in garlic for 30 seconds.
- Reduce heat to medium. Push beef aside, add tomato paste, and cook 30 seconds before mixing in. Stir in smoked paprika, mustard powder, garlic powder, and a pinch of salt and pepper. Cook 1 minute.
- Add uncooked pasta and stir to coat. Toast 2 minutes, stirring once. Pour in beef broth and oat milk, scraping up any browned bits. Bring to a boil, then cover and simmer on low for 10 to 12 minutes, stirring occasionally, until pasta is tender and sauce is creamy.
- Remove from heat. Stir in nutritional yeast until fully mixed. Taste and adjust salt and pepper. Serve immediately in warm bowls.
Notes
If the sauce thickens too much after adding nutritional yeast, loosen it with a splash of warm broth or oat milk. This dish is at its creamiest right off the stove, so I like to serve it right away.
