Ingredients
Method
- Blanch the green beans in boiling salted water for 3 to 4 minutes, then shock in ice water and drain.
- Cook the chopped onion and mushrooms in 2 tbsp olive oil over medium heat for 5 to 7 minutes, then add garlic, paprika, salt, and pepper.
- Sprinkle with 3 tbsp flour, cook 1 minute, then whisk in vegetable broth and almond milk. Simmer 2 to 3 minutes until thickened, then stir in nutritional yeast.
- Toss the beans with the sauce in a 9x13 dish. Toss sliced onion with ⅓ cup flour, 2 tbsp oil, and salt, and scatter on top.
- Bake at 375°F for 25 to 30 minutes until bubbling and crisp on top. Rest 5 minutes, then scoop and serve.
Notes
The nutritional yeast is optional, but adds a mild savory note. If you leave it out, consider a small squeeze of lemon juice just before serving to brighten the sauce. The casserole needs that 5-minute rest after baking to set slightly.
