Method
- Preheat the oven to 350°F (175°C). In a large bowl, mash the banana, then whisk in the oil, brown sugar, eggs, and vanilla until smooth.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Fold the dry ingredients into the wet ingredients with a spatula just until no flour streaks remain. Do not overmix.
- Line a 9×5-inch loaf pan with parchment paper. Scrape the batter in, smooth the top, and bake for 55 to 60 minutes until a toothpick comes out with moist crumbs.
- Cool in the pan for 10 minutes, then lift out with the parchment and cool on a rack before slicing.
Notes
If your bananas are not very ripe, you can roast them in the peel at 350°F (175°C) for 10 minutes to bring out their sweetness, then let them cool before mashing. The loaf tastes best the next day as the banana flavor deepens.
