- Preheat the oven to 375°F (190°C). Toss the apples with lemon juice, granulated sugar, and cinnamon in a large bowl until coated.
- In a separate bowl, whisk the flour, oats, brown sugar, and salt. Pour in the melted coconut oil and stir with a fork until clumpy.
- Spread the apple mixture into an 8x8-inch baking dish. Scatter the oat topping evenly over the fruit.
- Bake 40 to 45 minutes, until the topping is golden and the juices bubble thickly. Cool 10 minutes, then serve warm.
Notes
If the topping is pale after 45 minutes, switch the oven to broil for 1 to 2 minutes, watching closely so it does not burn. The crisp will thicken as it cools, so that 10-minute rest really matters.
