Crunchy Sesame Napa Cabbage Salad Recipe

Ingredients
  

  • 1 medium napa cabbage (about 2 lb)
  • 2 medium carrots
  • 4 scallions
  • 3 tbsp raw sesame seeds
  • 1/4 cup roasted unsalted peanuts (optional)
  • 3 tbsp toasted sesame oil
  • 2 tbsp soy sauce
  • 1 tbsp unseasoned rice vinegar
  • 1 tbsp granulated sugar
  • 1 clove garlic
  • Salt to taste

Method
 

  1. Toast sesame seeds in a dry skillet over medium heat until golden and fragrant, about 2 to 3 minutes; set aside. Whisk sesame oil, soy sauce, rice vinegar, sugar, and garlic in a small bowl.
  2. Slice napa cabbage into thin ribbons, shred carrots on a box grater, and thinly slice scallions. Combine in a large bowl.
  3. Pour dressing over and toss well. Let sit at room temperature for 5 minutes.
  4. Top with toasted sesame seeds and crushed peanuts, if using. Serve right away.

Notes

Pre-shredded cabbage and carrots cut prep time even further. This salad is best within an hour of dressing; after that, the cabbage softens but is still tasty.
