- Preheat oven to 350°F (180°C) and line two baking sheets with parchment.
- In a large bowl, cream the butter, granulated sugar, and brown sugar until pale and fluffy, about 2 minutes.
- Beat in the peanut butter, egg, and vanilla until smooth, about 1 minute.
- In a separate small bowl, whisk the flour, baking soda, and salt. Stir into the wet mixture just until no dry flour remains.
- Scoop 1 1/2 tablespoon mounds of dough onto the prepared sheets, flatten with a fork to make a crosshatch, and sprinkle with a tiny pinch of granulated sugar.
- Bake one sheet at a time for 14 to 16 minutes, until edges are deeply golden. Cool on the sheet for 2 minutes, then transfer to a wire rack to cool completely.
Notes
If baking multiple sheets, add 14 minutes per sheet; the cookies need to cool on the hot pan briefly to set their texture. For the crunchiest results, use a light-colored baking sheet, which prevents the bottoms from over-darkening.
