Method
- Mix the oats, oat flour, brown sugar, and salt in a large bowl.
- Heat the honey and butter in a small saucepan over medium heat until bubbling, about 2 minutes. Remove from heat and stir in the vanilla.
- Pour the warm honey mixture over the dry ingredients and stir until coated. Press firmly into a parchment-lined 9x13-inch baking sheet to a 1/4-inch thickness.
- Bake at 325°F (160°C) for 15 to 18 minutes, until deeply golden.
- Cool completely on a wire rack, then snap into bars.
Notes
For the sharpest snap, let the oat slab cool entirely before breaking it. Warm bars will bend instead of crack. Store in an airtight container to preserve the crunch.
