Crunchy Chinese Chicken Salad Recipe

Ingredients
  

  • 1 lb boneless, skinless chicken breasts
  • 4 cups thinly sliced Napa cabbage
  • 1 cup thinly sliced red cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 3 scallions, sliced
  • 1/4 cup slivered almonds
  • 1/4 cup fresh cilantro leaves (optional)
  • Sesame seeds, for garnish
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp toasted sesame oil
  • 1 tbsp honey
  • 1 tsp grated fresh ginger
  • 1 small garlic clove, grated
  • Pinch of salt

Method
 

  1. Bring a pot of water with sliced ginger, smashed garlic, and a pinch of salt to a simmer. Add chicken and cook 12 to 15 minutes until cooked through. Cool, then shred.
  2. Toast the slivered almonds in a dry skillet over medium heat, shaking often, until golden and fragrant, 3 to 5 minutes. Transfer to a plate.
  3. Whisk the soy sauce, rice vinegar, sesame oil, honey, grated ginger, and garlic until smooth. Taste and add salt if needed.
  4. Combine the Napa cabbage, red cabbage, carrots, bell pepper, scallions, and shredded chicken in a large bowl. Pour half the dressing over and toss until lightly coated.
  5. Transfer to a platter, drizzle the remaining dressing, scatter with toasted almonds and sesame seeds. Serve right away.

Notes

Let the poached chicken cool for about 10 minutes before shredding; you can speed it up by rinsing under cold water. If you’re making this ahead, store the dressing separately and toss just before serving. The dressing can be doubled if you like a heavier coat.
