Ingredients
  

  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1 (16 oz) can refried beans
  • 1 (4 oz) can diced green chiles, drained
  • 4 oz cream cheese, softened
  • 1/4 cup sour cream
  • 2 cups shredded Mexican blend cheese, divided
  • 4 cups thick tortilla chips, lightly crushed
  • Toppings: shredded iceberg lettuce, diced Roma tomatoes, sour cream, pickled jalapeños, salsa

Method
 

  1. Preheat oven to 375°F (190°C). Brown ground beef in a large oven-safe skillet over medium-high heat, about 7 minutes. Stir in taco seasoning and green chiles, then turn off heat.
  2. Spread refried beans over beef. Scatter half the crushed chips, then 1 cup cheese. Blend cream cheese and sour cream; drop spoonfuls over cheese and lightly spread. Top with remaining chips and cheese.
  3. Bake 20 minutes until cheese is melted and edges are crisp.
  4. Cool 5 minutes, then top with lettuce, tomatoes, sour cream, and jalapeños. Serve immediately.

Notes

For extra crunchy chips, reserve ½ cup of the crushed chips and sprinkle them on during the last 5 minutes of baking. The casserole is best served right away while the warm, melty layers contrast with cold, crisp toppings.
