Ingredients
  

  • 3/4 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1 tsp ground cinnamon
  • 6 tbsp unsalted butter, cold and cubed
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup sour cream or plain Greek yogurt
  • 1 1/4 cups mashed very ripe bananas

Method
 

  1. Whisk flour, brown sugar, and cinnamon for the crumb topping. Cut in cold butter until pea-sized crumbs form, then chill.
  2. Preheat oven to 350°F and line a 9×5 inch loaf pan. Whisk melted butter, sugar, eggs, vanilla, and sour cream. Stir in mashed bananas.
  3. Sprinkle dry ingredients over wet and fold gently until just combined.
  4. Spoon batter into the pan, top with chilled crumb clusters, and bake 55 to 65 minutes until a toothpick has moist crumbs.
  5. Cool in the pan 10 minutes, lift out, and cool completely before slicing.

Notes

Use bananas that are heavily speckled or almost black for the fullest flavor. A toothpick inserted in the center should come out with a few moist crumbs, not wet batter; if it’s liquid, bake 5 minutes longer.
