Ingredients

  • 4 large day-old croissants
  • 3 large eggs
  • 1/2 cup whole milk
  • 1/4 cup heavy cream
  • 1 tbsp granulated sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • Pinch of ground cinnamon (optional)
  • 3 tbsp unsalted butter, divided

Method

  1. Slice each croissant in half horizontally to create two thinner halves.
  2. Whisk together eggs, milk, cream, sugar, vanilla, salt, and cinnamon in a shallow bowl until smooth.
  3. Dip each croissant half into the custard for about 30 seconds per side, then set on a wire rack.
  4. Melt 1 tbsp butter in a large nonstick skillet over medium heat. Cook 3-4 halves at a time for 2-3 minutes per side until deep golden. Repeat with remaining butter.
  5. Serve hot with powdered sugar and maple syrup.

Notes

Day-old croissants are key. If yours are fresh, leave them out overnight. Keep the cooked toast warm in a 200°F oven on a wire rack so everyone eats at once.
