- In a 6-quart slow cooker, combine onion, garlic, carrots, celery, potatoes, green beans, diced tomatoes, cannellini beans, vegetable broth, Italian seasoning, bay leaf, and a generous pinch of salt and pepper. Stir to mix.
- Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until vegetables are tender.
- Stir in zucchini and frozen corn. Cover and continue cooking on low for 30 minutes, until zucchini is tender but not mushy.
- Remove bay leaf. Taste and adjust seasoning. Ladle into bowls and top with fresh parsley.
Notes
If you like a thicker soup, mash a few potato cubes against the side of the slow cooker before adding the zucchini. The soup thickens as it cools; add a splash of broth when reheating.
