- Pat turkey dry. Stir together olive oil, salt, pepper, garlic powder, onion powder, paprika, and thyme. Rub the mixture all over the turkey and let it sit 10 minutes.
- Spread onion rounds in a 6-quart slow cooker. Set the turkey on top, and pour chicken broth around the turkey. Cover.
- Cook on Low for 3 to 4 hours, until the internal temperature reaches 165°F in the thickest part.
- Transfer turkey to a cutting board, rest for 10 to 15 minutes, then slice against the grain. Spoon the juices and onions from the slow cooker over the slices.
