Ingredients

  • 2 large turkey legs (about 2½ to 3 lbs total)
  • 2 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper (optional)
  • ½ cup low-sodium chicken broth

Method

  1. Pat turkey legs dry, mix the spices, and rub the legs with oil and the spice blend until coated.
  2. Pour broth into a 6-quart slow cooker, place turkey legs in a single layer.
  3. Cover and cook on low for 6 to 7 hours, or high for 3 to 4 hours, until fork-tender.
  4. Broil the turkey legs skin side up on a baking sheet for 3 to 5 minutes until the skin is crisp.
  5. Serve whole or shred and spoon cooking juices over the top.

Notes

The legs are forgiving, so an extra hour on low will not dry them out as long as there is a little liquid in the pot. The skin crisps best when the broiler is fully preheated and the legs are a few inches from the heat source.
