Ingredients

  • 3 to 4 lb boneless skinless turkey breast
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 onion, quartered
  • 3 garlic cloves, smashed
  • 3 sprigs fresh thyme (or 1 tsp dried)
  • ½ cup chicken broth

Method

  1. Pat the turkey dry. Mix olive oil, salt, pepper, garlic powder, paprika, and dried thyme; rub over the turkey.
  2. Arrange onion, garlic, and thyme sprigs in a 6-quart slow cooker. Pour in broth and place the turkey on top.
  3. Cover and cook on LOW for 5 to 6 hours or HIGH for 2.5 to 3 hours, until the thickest part reaches 165°F (74°C).
  4. Rest the turkey 10 minutes, then slice against the grain. Strain the cooking liquid if desired and drizzle over the slices.

Notes

Letting the turkey rest before slicing is essential for juicy meat. If you’re using a bone-in turkey breast, add an extra 30 to 60 minutes to the cook time, and always check the internal temperature.
