Crockpot Tater Tot Casserole Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 cup diced yellow onion
  • 2 cloves garlic, minced
  • 1 ½ cups frozen mixed vegetables (peas, carrots, corn), thawed
  • 1 (10.5 oz) can cream of mushroom soup
  • ½ cup sour cream
  • 2 tsp Worcestershire sauce
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 (32 oz) bag frozen tater tots
  • ½ tsp salt
  • ¼ tsp black pepper
  • Cooking spray or a slow cooker liner

Method
 

  1. Brown the ground beef and onion in a skillet over medium-high heat, about 5 minutes; add garlic and cook 30 seconds. Drain fat.
  2. Reduce heat to low. Stir in the soup, sour cream, Worcestershire sauce, salt, pepper, 1 cup cheese, and mixed vegetables until creamy.
  3. Spray a 6-quart slow cooker. Spoon in the beef mixture, top with frozen tater tots in a tight layer, and sprinkle the remaining 1 cup cheese over them.
  4. Cover and cook on LOW 4 hours or HIGH 2 hours, until bubbly.
  5. Broil the top for 2 to 3 minutes to crisp the tots, then scoop and serve.

Notes

The tater tots will soften in the slow cooker; that quick broil gives them a crisp, golden top. If you do not have a broiler-safe slow cooker insert, transfer the casserole to a baking dish before broiling.
