Crockpot Taco Casserole Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 tbsp taco seasoning
  • 1 cup salsa
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 10 to 12 small corn tortillas
  • 2 cups shredded Mexican blend cheese
  • Toppings: sour cream, diced tomatoes, cilantro, avocado, etc.

Method
 

  1. Brown the ground beef and onion in a skillet over medium-high heat until no longer pink, about 6 to 8 minutes. Stir in taco seasoning and salsa, then remove from heat.
  2. Spray a 6-quart slow cooker with nonstick spray. Layer 4 tortillas, half the beef mixture, half the beans and corn, and 1 cup cheese. Repeat with another layer, then top with remaining tortillas.
  3. Cover and cook on low for 3 to 4 hours, until edges are bubbly and tortillas are tender.
  4. Turn off heat, top with remaining cheese, cover for 5 minutes, then scoop onto plates. Finish with sour cream, diced tomatoes, cilantro, and any other toppings you like.

Notes

Let the casserole rest for 5 minutes after adding the final cheese so the layers set before you scoop. If you want to make it spicier, use hot salsa or stir a chopped chipotle pepper into the beef mixture.
