Crockpot Swiss Steak Recipe

Ingredients
  

  • 2 lbs beef round steak, cut into 4 to 6 serving pieces
  • 1/3 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 large onion, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (8 oz) can tomato sauce
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce

Method
 

  1. Pat beef dry. Dredge pieces in flour mixed with salt and pepper. Brown in hot oil in batches, then transfer to slow cooker.
  2. Sauté onion, bell pepper, and garlic in the same skillet until softened.
  3. Stir in diced tomatoes, tomato sauce, broth, and Worcestershire. Bring to a simmer, then pour over beef.
  4. Cover and cook on low for 7 to 8 hours. Slice beef against the grain and serve with the sauce.

Notes

The beef slices most cleanly after a quick 5‑minute rest. For a thicker gravy, remove the lid during the last 30 minutes of cooking or stir in a cornstarch slurry 15 minutes before serving.
