- Whisk together ketchup, brown sugar, rice vinegar, soy sauce, garlic, and ginger in a bowl.
- Heat oil in a skillet, season chicken with salt, and sear until golden on two sides, about 5 minutes.
- Transfer chicken to the slow cooker, add peppers, onion, and pineapple, then pour the sauce over and toss.
- Cover and cook on HIGH for 2 1/2 to 3 hours or LOW for 4 to 5 hours.
- Stir together cornstarch and water, pour into the slow cooker, and cook on HIGH for 15 to 20 minutes until thickened.
- Spoon over rice, garnish with green onions and sesame seeds, and serve hot.
Notes
The cook time can vary a bit depending on your slow cooker model, so the first time you make it, check the chicken at the earlier end of the range. Let the sauce rest for 5 minutes after thickening if it seems thin, it will continue to set up off the heat.
