Crockpot Sweet and Sour Chicken Recipe

Ingredients
  

  • 1 1/2 lbs boneless skinless chicken thighs, cut into 1 inch pieces
  • 2 tbsp vegetable oil
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 small yellow onion, cut into chunks
  • 1 cup canned pineapple chunks, drained
  • 1/2 cup ketchup
  • 1/3 cup packed brown sugar
  • 1/4 cup rice vinegar
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 2 tbsp cornstarch
  • 2 tbsp water
  • Sliced green onions and sesame seeds for serving

Method
 

  1. Whisk together ketchup, brown sugar, rice vinegar, soy sauce, garlic, and ginger in a bowl.
  2. Heat oil in a skillet, season chicken with salt, and sear until golden on two sides, about 5 minutes.
  3. Transfer chicken to the slow cooker, add peppers, onion, and pineapple, then pour the sauce over and toss.
  4. Cover and cook on HIGH for 2 1/2 to 3 hours or LOW for 4 to 5 hours.
  5. Stir together cornstarch and water, pour into the slow cooker, and cook on HIGH for 15 to 20 minutes until thickened.
  6. Spoon over rice, garnish with green onions and sesame seeds, and serve hot.

Notes

The cook time can vary a bit depending on your slow cooker model, so the first time you make it, check the chicken at the earlier end of the range. Let the sauce rest for 5 minutes after thickening if it seems thin, it will continue to set up off the heat.
