Ingredients

  • 2 lbs flank steak, sliced into thin strips
  • 3 bell peppers (a mix of colors), sliced
  • 1 large yellow onion, sliced
  • 3 cloves garlic, minced
  • 1 (10-oz) can diced tomatoes with green chilies, undrained
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • Juice of 1 lime
  • ¼ cup beef broth or water

Method

  1. In a large bowl, toss the steak strips with chili powder, cumin, smoked paprika, salt, pepper, and lime juice. Let rest 10 minutes.
  2. Layer half the peppers and onion in the bottom of a 6-quart slow cooker. Add the seasoned steak, then the tomatoes with their liquid, then the remaining peppers, onion, and garlic. Pour beef broth around the edges.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours, until beef is fork-tender. Stir gently.
  4. Serve the steak and peppers in warm tortillas with cilantro, sour cream, and extra lime.

Notes

For the most tender results, slice the steak against the grain. The cooking liquid will be thin; if you prefer a thicker sauce, whisk 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir it in during the last 30 minutes of cooking.
