- Pat steak dry, season with salt and pepper, and sear in olive oil over medium-high heat in two batches until browned on both sides, about 2 minutes per side. Transfer to the slow cooker.
- Reduce heat to medium, melt 2 tbsp butter in the skillet, add garlic and stir 30 seconds. Pour in broth, soy sauce, and Worcestershire, scraping up browned bits. Simmer 1 minute, then pour over steak.
- Cover and cook on high for 3 to 4 hours or low for 6 to 7 hours. In the last 20 minutes, stir in the cornstarch slurry and let the sauce thicken.
- Ladle the steak bites and sauce over mashed potatoes, noodles, or rice and serve hot.
Notes
If you’re using a thicker cut of chuck, the steak bites might need closer to 4 hours on high to reach fork-tender. You can also let the dish sit on warm for up to an hour before serving; the sauce will stay silky.
