Crockpot Spinach Artichoke Dip Recipe

Ingredients
  

  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 10 oz frozen chopped spinach, thawed and squeezed dry
  • 14 oz can artichoke hearts, drained and chopped
  • 1 cup shredded mozzarella, divided
  • 1/2 cup grated Parmesan
  • 3 garlic cloves, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Pinch red pepper flakes

Method
 

  1. Beat the cream cheese, sour cream, mayonnaise, garlic, salt, pepper, and pepper flakes in the slow cooker until mostly smooth.
  2. Fold in the spinach, artichokes, 1/2 cup mozzarella, and the Parmesan.
  3. Cover and cook on low for 2 hours, then stir. Cover and cook 15 to 30 minutes more if needed, until creamy and bubbly at the edges.
  4. Sprinkle the remaining 1/2 cup mozzarella on top, cover, and cook 15 to 20 minutes until melted and bubbly.
  5. Switch to warm, stir, and serve straight from the crock with dippers.

Notes

If your slow cooker runs hot, start checking at 1 hour 30 minutes. The dip can sit on warm for up to 2 hours; stir and add a splash of milk if it thickens too much.
